Last week I made some changes to my form and now the email is not working correctly.

I already have Admin Tools. So I won't need to install that, but it looks like I need to update my admin tools. Should I do that, THEN update Joomla?

Yes, update it first. However, please make sure you've created a backup of the site before updating Admin Tools.
